The 5-Minute Breakfast I Eat Every Day

Breakfast is the most important meal of the day. But when you’re like me and like to sleep in, sometimes you just don’t have time to make an elaborate meal in the morning. Sure, I can throw together a bowl of cereal in a pinch, but that doesn’t satiate me for long. Luckily, on those hectic mornings, I know I can rely on my favorite 5-minute breakfast—avocado toast—but with a little bit of a twist!

How To Make My Favorite 5-Minute Avocado Toast

This is slightly embarrassing to admit but it wasn’t until last summer that I discovered how wonderful avocado toast is. I was one of the haters—but now I’ve seen the light. And as an Aldi stan, the ingredients for my brekkie only run me about $16! To create my go-to breakfast, here’s what you’ll need.

Ingredients

  • Avocados: I get the 6-count bag so it can last me about a week.
  • Bagels: I love a good plain bagel so this is how I incorporate it into my mornings!
  • Hash Brown Patties: The 20-count pack typically lasts me a while. 
  • Cream Cheese: Avocado and cream cheese just go together so well!
  • Everything Bagel Seasoning: While the Trader Joe’s one will always have my heart, Stonemill’s version has quickly become another favorite.

Directions

  1. Toast 2 hash browns. I do this first so it can cool down a little while I prepare the rest of my breakfast. As the hash browns heat up, cut the avocado in half. Pit the avocado and cut slits into the avocado so it turns into strips.
  2. Take the hash browns out of the toaster and toast the bagel. I like to be a little toasted but not burnt.
  3. Once the bagel is done toasting, spread cream cheese on both slices. Sprinkle a little bit of the everything bagel seasoning and place the hash browns on each bagel slice.
  4. Arrange your avocado slices on the hash browns. Top off with more everything bagel seasoning. 

And that’s it! This was practically the only thing I would eat my senior year of college and I just know it’ll become your new favorite.
